My Story...

I have struggled with my weight and body image for a long time and I have tried diets, exercise videos, DVD's, drinks, pills...the works! Nothing stuck!

In 2008 I joined Weight Watchers and things went well, I lost 10 lbs quickly, but as soon as I got off track I gained it back and lost it again over and over as I went off and on the plan.

In July 2009 I joined Gold's Gym, began working with a trainer and attended the gym on my own on a semi-regular basis.

This past Saturday, January 30, 2010 I signed up for the gym's 12 week challenge to as Emeril says, "Kick it up a notch" and get serious about changing my body for the better. Over the next 12 weeks I will be following the weight watchers plan for my nutrition needs and working out regularly at the gym to reach my goal and WIN the challenge!

I will journal my progress and I encourage anyone that has made a commitment in 2010 to work on a better you; whether it be weight loss, weight gain, muscle strength, or simply living healthier lifestyle, that you JOIN ME post your progress on this blog and TOGETHER we will support, motivate and encourage one another through it all!

I only have one rule...Keep it positive! :)

What's for Dinner? Spahgetti Squash!

Another great recipe for you!  Have you tried spahgetti squash?  It is the best and it is figure friendly!  ZERO points on the weight watcher plan and I pair it with 1/2 cup spahgetti sauce for a total of 1 point!!!!

Tonight I need a quick dinner...tap class after school and then it's homework, clean up and bedtime, but I don't want to get off track by hurrying through the drive thru line so here what's for dinner...

Green beans...0 points
Spahgetti sauce (any) I am using Classico's Italian sausage YUM!
Medium sized Spahgetti Squash-they are big round and a pale yellow color in the fresh produce section


Cut the squash in half, scoop out the seeds and place it cut side down in a baking dish.  Poke holes in the tops with a fork. Bake at 350 for 30-40 minutes until tender. Meanwhile heat your sauce on the stovetop.

Scoop out the flesh of the squash with a serving spoon (it will look like spahgetti noodles) add salt, pepper or your other favorite seasonings and the sauce! Top with cheese if you like!  Serve with green beans or your favorite zero point veggie!  Remember to add up points for any extra toppings you add and EAT UP!

Mom's...my kids love it and they don't realize they are eating veggies because it looks like a pasta!
